The mother of two launched “Healthy New You” to share recipes with friends in 2012.
“Here I am four years later still doing it,” DiGiacomo said.
DiGiacomo’s passion for cooking and baking began in her grandfather’s kitchen when she was a child.The recipes they followed were rarely healthy and often decadent, she said.
Since honing her culinary skills, however, DiGiacomo has developed a knack for giving the recipes she grew up on — and new ones — a healthy twist.
The meal planning begins weeks in advance for DiGiacomo. She chooses a different theme for each week and posts a blurb about what followers can expect to see that week every Sunday night.
This week, DiGiacomo is keeping meals geared toward the “Meatless Monday” campaign.
“It is found in numerous studies that by going ‘meatless’ at least one day a week can help improve your overall health,” this week’s post says. “This is a great time to start with all the fresh fruits available in peak spring and summer seasons.”
DiGiacomo no longer needs the page to fill her time, since she’s now working in a chiropractor’s office and is back in school for health coding.
Still, she hopes her posts will make life easier for other busy parents and mix things up for people looking to stick to a healthy meal plan.
“When you’re a busy mom or working every day, who has time to make a meal every night?” she said. “It’s become a fun little thing.”
